La Sierra, Colombia | 300g


Okay, now this one surprised us a little. It was fruity and funky like a natural but finished so clean like a classic washed Colombian coffee. Look out cause it’s super juicy, with a classic cola-like sweetness but big flavours of wild blueberries from the semi-anaerobic fermentation.

Coffee Story
Located in the highlands of the municipality of Pitalito, in an area called Bruselas, sits Eliberto's farm La Sierra. Eliberto Silva has been producing coffee for more than seven years. Still, two years ago, he decided to change how he saw coffee in response to the premiums he received on the specialty market for his excellent varieties. Eliberto shifted his focus from a more conventional coffee approach to focus more on his fermentation and drying processes. He is innovative and carries out all his methods by trial and error. This specific lot is a Pink Bourbon variety that has gone through the wash process but has been fermented semi-anaerobically, resulting in a coffee that is very similar to a honey.
