La Piragua Pink Bourbon 300g

Producer Alexander Vargas began working on his family-owned coffee farm, later purchasing his own farm, Finca La Piragua, in the Palestina area of the Huila region. He adapted the land and built it into a coffee plantation from scratch, planting his own coffee from seed. He owns his own processing equipment, which means he depulps all his coffee cherries the day after picking, puts the coffee through a double fermentation, and then dries it to a specific moisture content using a parabolic drying bed. This specific Pink Bourbon variety’s origin is a little mysterious, the shape and size of the green coffee itself is quite small, long, and thin and the cup profile is more akin to that of a Typica, Gesha, or Ethiopian Landrace variety than that of a Bourbon. But Colombian coffee farmers have just kept cultivating it because it just tastes so darn good!
