Can't every day be a Heyday!! This big, sweet and syrupy coffee makes every day feel like a special occasion. And why not? We're here to celebrate any day, but mainly right now, cause we're commemorating the launch of our new rebranded bags!! This standout lot from the Tarqui subregion in Huila represents many of our feelings and vibes about coffee. It's got all those sugary and spice-like aromatics, a syrupy texture and a cola-like sweetness. What a time to be alive!!

Coffee Story
Maryi Cruz is a young woman taking the first steps toward managing and processing her own coffee with the help of her Father, Ferny, on her farm, Penjamo, in the tiny hamlet of Ricabrisa, about 2 hours from Tarqui. Maryi was excited to follow in her family's footsteps and become involved in the specialty coffee market based on some of her family's early successes. The coffee itself is a Colombia variety which is quite common in the subregion. Cherries are collected at peak ripeness on a 4 - 6 week cycle on the farm. After picking, the cherries are left to ferment for 12 hours before being de-pulped. The seeds are then washed and left to dry ferment in sealed plastic bags for 66 hours before being rinsed and left in the bags for another two days before and then brought down to the town of Ricabrisa to be dried in a solar dryer.
