Amatenango de la Frontera is a region that is steps away from the Guatemalan border in Mexico. Coffee grown here is very reminiscent of the famous and classic Huehuetenango growing region in Guatemala. As a Mountain Water Processed decaf, the coffee is exposed to a water solution that extracts the caffeine. The water is then run through a special filter that captures the flavour molecules. From there the water - without the caffeine - is reintroduced to the green coffee so that any flavour or other compounds other than the caffeine can be reintroduced to the beans. It is then dried again and prepared for export.
